Head
There is a lot of meat on the pig’s head which can be roasted whole or simmered with aromatics and stripped back. It’s inexpensive and versatile and can make wonderful terrines and pates. The ears can be crisped, the tongue smoked and pressed and the cheeks casseroled. So much from so little!
