Dry-ageing just got better!

Solent Butchers has installed a salt wall to its dry-ageing chiller. During the dry-ageing process, the salt wall reduces bacterial growth and helps avoid unwanted spoilage. The salt wall is fitted with Himalayan salt bricks which help keep the humidity in the chiller at the optimum level.
